Mead’s Easy Apple Cake Recipe 🍎

Looking for a simple, cozy way to enjoy our delicious apples in a fun baking project? This Easy Apple Cake is soft, flavorful, and perfect for a tasty breakfast treat - or any time you’re craving something sweet and homemade.


The apples add natural juiciness, warm spices bring depth and the optional nuts or raisins give a delightful texture. Almost any apple variety works, though we especially love making it with Mead McIntosh apples. 


🍎 INGREDIENTS:

  • 1 cup flour

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • 4 tablespoons unsalted butter (½ stick), softened

  • 1 cup white sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • 1 egg

  • 2 cups finely diced Mead apples (perfect for softer, juicier apples - see note below)

  • ½ cup chopped nuts (walnuts or pecans) OR ½ cup raisins (not both)


🍰 DIRECTIONS:

  1. Preheat your oven to 350°F. Grease and flour a 9-inch square cake pan.

  2. In a medium bowl, whisk together the flour, baking soda and salt.

  3. In a larger bowl, use an electric mixer to cream together the butter, sugar, vanilla, cinnamon and nutmeg.

  4. Add the egg and mix until smooth.

  5. On low speed, beat in the dry ingredients until combined. Don’t overmix.

  6. Fold in the apples and nuts or raisins by hand.

  7. Spread the batter evenly into the prepared pan.

  8. Bake for 40-45 minutes, until the cake is golden brown and a toothpick inserted in the center comes out clean.

  9. Let cool for 10 minutes before serving.


🍨 SWEET TIPS & NOTES:

  • This is a perfect way to use up softer or older apples - they’ll cook down and make the cake extra moist.

  • You can mix in your favorite apple varieties or whatever you have on hand.

  • Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat!
