Looking for a festive dessert that feels classic, cozy and a little unexpected? Meet Mead’s Easy Apple Buckle - an old-fashioned New England favorite that’s unbelievably simple and rich with buttery flavor.
A buckle is a single-layer cake topped with fresh fruit. As it bakes, the cake rises up around the fruit, giving it a charming “buckled” look. It’s in the same family as cobblers and crisps, but lighter on fruit and big on comfort. Basically: cake + fruit + a little crumble magic - the best of both crisp and cobbler worlds.
Perfect for your holiday table (or breakfast the next morning).
🍎 INGREDIENTS:
½ cup unsalted butter (1 stick)
2 large apples (sweet varieties like Gala, Fuji, or Honeycrisp)
1 cup flour
¾ teaspoon salt
½ teaspoon baking powder
1 cup sugar
1 cup whole milk
1 teaspoon vanilla extract
🍰 DIRECTIONS:
Preheat the oven to 375°F. Place a rack in the center.
Add the butter to a 9”x5” loaf pan and set the pan in the oven while it heats. Remove once the butter is melted (about 5 minutes). Let cool slightly.
Peel, core and thinly slice the apples.
In a large bowl, whisk together the flour, salt and baking powder. Add the sugar, milk and vanilla; whisk until smooth. Then whisk in the melted butter from the loaf pan until fully combined (don’t over mix).
Pour the batter back into the buttered loaf pan.
Arrange apple slices in the batter, rounded edges facing up, leaving small spaces between each so the batter can rise around them.
Bake for 65–70 minutes, until golden and set.
Let cool slightly before serving. It’s heavenly with vanilla ice cream.
