🧁 EASY-MEAD APRICOT CRISP RECIPE
Ingredients
Fruit Filling: • 12 fresh apricots (about 2 lbs), halved, pitted & sliced • 1/3 cup apricot preserves (optional) • 3 tbsp white sugar • 1/2 tsp cinnamon • 1½ tbsp melted butter
Crisp Topping: • 1 cup flour • ½ cup light brown sugar • 3 tbsp white sugar • ½ tsp cinnamon • ¼ tsp nutmeg • 8 tbsp unsalted butter, softened • ¾ cup chopped nuts (almonds are great, but walnuts or pecans work too!)
🥣 Directions
Prep the Fruit: Preheat the oven to 375°F. Butter a 9-inch oval baking dish or pie plate. Warm preserves in the microwave (10–20 seconds), or skip and double the sugar to 6 tbsps instead. In a bowl, toss sliced apricots with preserves (if using), sugar, cinnamon, and melted butter. Spoon into the prepared dish.
Make the Crisp Topping: In a large bowl, combine flour, both sugars, cinnamon, and nutmeg. Cut softened butter into chunks and work into the mix with your fingers until crumbly. Stir in chopped nuts—mixture should hold together in clumps. Spread evenly over apricots.
Bake & Serve: Bake for 40 minutes or until the fruit is bubbling and the topping is golden. Serve warm with vanilla ice cream or whipped cream. Summer perfection. 💛
